Our Grassfed Buffalo...
Grassfed meats are rich in all the fats now classified as health-enhancing, but
low in the fats that are linked with disease. Grassfed buffalo meat has a
healthy ratio of Omega 3's to Omega 6's (3 to 1). It is one of the richest
sources of Conjugated Linoleic Acid, (CLA) which has been shown to slow the
progress of some types of cancer and heart disease, reduce body fat, and
increase muscle mass. It is interesting to note that buffalo meat has half the
artery-clogging fats of soy. Research by Dr. M. Marchello at North Dakota State University has shown that the
meat from buffalo is a highly nutrient dense food because of the proportion of
protein, fat, mineral, and fatty acids to its caloric value. |

BUFFALO MEAT COOKING GUIDE
|
|
|
Due to the low fat nature of buffalo meat, it must
be prepared differently than beef. Buffalo can be substituted for
almost all beef or lamb recipes, yet it is essential not to overcook
it. Low and slow is the slogan. When prepared properly, buffalo
offers a rich, flavorful taste. |
